Weekly Meal Plan | Week 4

Happy Easter weekend! I hope you're enjoying your time with friends and family doing what you love! If you're still looking for brunch inspiration here are 10 Recipes for a Healthy Fabulous Brunch that will get you in the spirit of springtime! The Hubs and I had an AMAZING brunch yesterday at one of our favorite restaurants. I can't wait to share the details with you!

This week I'm craving lightened up comfort foods with lots of flavor!



Breakfast:
My Favorite Frittata >> I prepare this frittata ahead of time for the week ahead almost every week! I change up the veggies and proteins each week so that we never get tired of the flavors. No messing with this on the stovetop. Everything is baked right in the oven. So simple!

Snacks I'm Loving Lately:
Plantain chips with salsa and guacamole >> I can't say enough good things about these plantain chips from Trader Joe's! They're fab dipped in just about anything and are just as tasty on their own.

Freeze Dried Mango >> Another Trader Joe's favorite! The mango is freeze dried without any added sugar. It's perfectly sweet and has a slight crunch.

Dinners:
Zoodles with Chicken, Sun Dried Tomatoes, and Pesto >> This is a new recipe that I'll be whipping up this week. With springtime here I've been craving pesto like crazy!

Grass-fed Beef Chili >> This is a recipe that's always in repeat in our house. I usually use ground turkey, but occasionally I'll make this extra delicious with grass-fed ground beef.

Slow Cooker Tacos Al Pastor by Gimme Some Oven >> Whenever I see pork should on sale at the grocery store I usually have plans to throw it in the crockpot in some way or another. Fresh pineapple is in season right now and will taste amazing with this pork wrapped in fresh lettuce cups!

Loaded Sweet Potato Chili Fries >> Leftover chili is AMAZING served over baked sweet potato fries and smothered in healthy toppings like: Green onion, fresh lime juice, tomatoes, black olives, guacamole...I could go on and on!

Healthy Cauliflower Rice by Eat Yourself Skinny with Teriyaki Chicken and Broccoli >> Cauliflower rice is one of my favorite foods and pre-riced cauliflower from Trader Joe's is yet another one of my favorites! My teriyaki chicken isn't necessarily a recipe. I just brown up some bite sized chicken or use pre-cooked shredded chicken and mix in some coconut aminos, honey and garlic.

There you have it, proof that comfort food can definitely be made healthy with a few adjustments!
