Weekly Meal Plan | Week 5

Happy weekend! After our weekend getaway in Paso Robles the Hubs and I are getting back on track with simple healthy meals this week!


Breakfast
Detox Green Smoothies by Healthy Fabulous Life >> I can't get enough of this green smoothie! The combination of cilantro, pineapple and ginger make me feel amazing in the morning!

Hard boiled eggs with fresh fruit >> This is a weekly staple for us and so quick and easy!

Snacks I'm Loving Lately
Baked Sea Salt and Garlic Kale Chips by the Busy Baker >> I recently tried baked kale chips and am OBSESSED!

Mixed olive tapenade from Trader Joe's with plantain chips for dipping >> Yum!

Dinners
Crock Pot Maple Dijon Chicken Drumsticks by Skinnytaste with sautéed shredded brussel sprouts and roasted sweet potatoes >> If you haven't tried cooking chicken drumsticks in the crockpot...you need to! The chicken gets perfectly tender and the flavors of maple and Dijon in this recipe are so delicious.

Baked white fish with lemon, roasted cauliflower and sautéed kale >> I try to eat fish at least once a week. My go to is usually salmon, but I'm switching things up this week with a simple baked white fish.

Lemon and Herb Spaghetti Squash with Roasted Shrimp by Eat Yourself Skinny >> Since going Paleo, I honestly never miss eating regular pasta with all of the other options there are now. Spaghetti squash is one of my favorites.

Baked Greek Chicken with roasted potatoes and Greek salad >> I almost always prepare baked chicken breasts of some sort each week. I try to mix up the variations so that we don't get tired of this simple dish. This week I'll be adding lemon, garlic and fresh oregano!

Slowcooker Vietnamese Noodle Soup (Pho Ga) by Hello to Fit >> The weather has been cold and rainy here which has me craving soup. This Pho uses rotisserie style chicken for a simple weeknight meal. I'm planning to prepare a whole organic chicken in my slowcooker to use in this soup and to have on hand for salads during the week. Then I'll use the bones to make broth!
