Weekly Meal Plan | Week 6

In my last post I talked about why I'm committing to 30 days on the Autoimmune Protocol (AIP) and shared my plan for success. I've been following the AIP diet for about a week now and so far my experience has been wonderful. My symptoms have decreased incredibly and I can feel my body starting to heal. I'm also getting better sleep and seeing reduced anxiety which has been fabulous.

The downside to the AIP diet is that it can be very restricting. Rather than focus on the foods I can't eat I am choosing to focus on the healing whole foods that I can eat! In my AIP post I shared a cheat sheet that outlines what you can and cannot eat on the plan. I have it posted on my fridge at home and it's been very helpful!

Let's get to my first AIP Weekly Meal Plan!

Turkey and Roasted Sweet Potato Hash >> I love my daily egg(s) so trying to find egg-free breakfast ideas has been a bit of a challenge, but this breakfast hash has helped get me through! I brown ground turkey in a skillet with some chopped onion then stir in roasted sweet potatoes and top with creamy avocado. I prep this hash on Sunday and enjoy throughout the week.

Green Smoothies >> On repeat!

Snacks I'm Loving Lately
Guacamole + Plantain Chips >> I've been craving avocado like crazy and as always love my plantain chips from Trader Joes!

Fresh Fruit + Cut Veggies >> Keeping my snacks fairly simple while on AIP

Hawaiian Chicken Skewers by Primal Palate >> The weather is warming up and I'm looking forward to firing up the grill! These chicken skewers are flavored with fresh ginger, cilantro and pineapple and are AIP compliant.

Mojito Shrimp by Reclaiming Yesterday with Coconut Lime Cauliflower Rice and spiralized cucumbers >> These flavors?! I'll be leaving out the rum and coconut sugar to make this dish AIP compliant.

Grilled Chicken Breasts with Strawberry Mint Bruschetta by Balanced Bites >> I definitely have been missing tomatoes, but this strawberry bruschetta looks amazing! I'll also serve this dish with grilled zucchini for a complete meal.

Lettuce Wrapped Burgers with Sweet Potato Fries >> I love keeping Trader Joes Grass Fed Frozen Burger Patties in my freezer for quick weeknight meals.

Turmeric and Spice Chicken Drumsticks by Real Food with Dana with Salad >> I try to incorporate turmeric into my meals as often as I can. It is a powerful healing spice and also AIP compliant! I'll be leaving out the cardamom to make this dish AIP compliant.
