Weekly Meal Plan | Week 8

Raise your hand if you're relieved it's the weekend! RAISES HAND! I'm enjoying every minute of this weekend of rest and hope you are as well!

Last week I began the Tone It Up Bikini Series. This is one of my favorite annual fitness challenges. The Tone IT Up (TIU) girls really are amazing and their workouts are no joke. I have not taken the plunge and become an official TIU member, but it's something I've been strongly considering. If you haven't already, you must check them out!

My 30 day AIP challenge is complete! I enjoyed the process and feel like my body hit the refresh button. I will definitely be doing this again in the future.

Baked Frittata >> Roasted sweet potato, sliced Aidells chicken apple sausage, onion, spinach, and eggs baked to perfection. The perfect combination of sweet and salty flavors, baked in advance for easy breakfasts during the week.

Snacks I'm Loving Lately
Trader Joe's Truffle Oil Marcona Almonds >> Oh my gosh! These are the most amazing snack and need these in your life!

Fresh cut veggies + another new Trader Joe's tahini dip >> Tahini blended with all kinds of fresh herbs (cilantro, chives, mint, dill) with lemon. SO good! Perfect as a dip or would be delicious served over some grilled chicken or fish.

Grilled Chicken Lettuce Wrapped Tacos with Strawberry Salsa by Tone It Up >> I can't get enough strawberry salsa! TIU shared this sneak peek recipe as part of their Bikini Program this week. Can't wait to try!

Turkey Veggie Soup >> Last week I prepared a whole organic chicken in the crockpot and made broth out of the bones. I love that this soup has lean protein and is filled with whatever seasonal veggies I have on hand.

Slow Cooker Tacos Al Pastor by Gimme Some Oven >> This is my favorite style of pulled pork. It practically cooks itself and the fresh pineapple feels like summertime! We'll be enjoying this meal for Cinco de Mayo!

Greek Salmon Salad >> We've been eating wild salmon almost every week while it's been on sale and I'm loving it. I had a salad like this at a restaurant that I fell in love with and will be trying to recreate the recipe at home.

Balsamic Chicken Salad with Kale, Berries and Sliced Almonds >> Maybe it's the weather or dreaming of summer, but I've been on a salad kick! I'm planning to bake some chicken with a balsamic and fresh rosemary glaze then serve over massaged kale topped with fresh berries and sliced almonds for some crunch. Can't go wrong!
