Paleo Pumpkin Spice Cookies with Chai Icing

Southern California is finally beginning to feel like fall. We even had a good thunderstorm this weekend - It was perfect! Needless to say, I spent most of the weekend in my favorite leggings, lit all the pumpkin candles and baked these pumpkin spice cookies complete with chai icing.

Grain-free pumpkin spice cookies filled with AIP friendly spices and drizzled with chai icing. You read that right...paleo "icing" is a thing. Of course I had to step it up even further with chai. Give me all the chai!!




Paleo Pumpkin Spice Cookies with Chai Icing

Ingredients

1/4 cup coconut flour, sifted
1 scoop Vital Proteins Collagen Peptides
1/4 cup nut milk pulp (can substitute with almond flour)
1/4 tsp baking soda
1/4 tsp sea salt
1 1/2 Tbsp cinnamon
1 tsp ground clove
1 tsp ground ginger
1/2 cup pumpkin puree
1 egg
1/8 cup maple syrup
1 tsp vanilla extract

Icing

1/2 cup coconut milk
1 tsp butter or palm shortening (for dairy free)
2 chai tea bags
1 Tbsp honey
2 Tbsp store bought coconut butter or make your own
1/2 tsp vanilla extract
1/4 tsp ground cinnamon

Instructions

1. Preheat the oven to 350 degrees.
2. Mix together the dry ingredients in a small bowl.
3. In a large bowl, combine the pumpkin puree, egg, maple syrup and vanilla extract.
4. Slowly incorporate the dry ingredients into the wet. Allow the mixture to sit for 5 minutes, this will help the coconut flour absorb.
5. Scoop balls of dough onto a lined baking sheet.
6. Bake for 20 minutes until a toothpick inserted comes out clean. Let cool completely.
7. While the cookies cool, prepare the icing: Add the coconut milk and butter to a small saucepan and bring to a simmer. Steep the tea bags into the mixture for 5 minutes. Discard the tea bags. In a small food processor, add 2 tablespoons of the chai tea mixture (save the rest for a latte the next day), along with the remaining icing ingredients. Blend until combined into an icing consistency.
8. When cookies are completely cool, drizzle the icing over the cookies.

    1. I'm obsessed with the stuff! Love the added protein and gut healing benefits it adds to baked goods! My favorite way to use it is to froth with almond or coconut milk for my tea latte.
