Pumpkin Pie Chia Pudding Parfait

A protein and fiber rich breakfast, snack or dessert with all the flavors of fall! Layered with pumpkin pie chia seed pudding, dairy-free yogurt and pumpkin spice grain-free granola. 

When I first created this for breakfast one day, it was honestly one of the best breakfast I've had in a long time. This parfait is so thick and creamy and tastes just like pumpkin pie. When you add in the pumpkin spice grain-free granola...oh my goodness! So, so good! I used my Pumpkin Spice Grain-Free Granola to really up the fall flavor. Trust me on this, you definitely need to try that granola!

This chia seed pudding parfait is gluten-free, paleo and vegan friendly, is packed with nutrients, and is so simple to prepare! Healthy pumpkin pie for breakfast?! Yes please!

Despite their tiny size, chia seeds are one of the healthiest foods on the planet! A one ounce serving provides 11 grams of fiber, 4 grams of protein, and plenty of healthy fats and vitamins. 

Pumpkin is equally nutrient-dense. One serving provides 3 grams of fiber, 2 grams of protein, and lots of healthy carbs, vitamins, minerals and antioxidants. 

I love to prep this chia pudding recipe at the beginning of the week to have on hand for healthy breakfasts, snacks or dessert. All you need to do is mix up the chia pudding and store in the fridge (at least 3 hours to overnight). Then when you're ready to enjoy all the fall goodness, simply layer the pudding with your favorite yogurt and granola. Fall in a cup!

Pumpkin Pie Chia Pudding Parfait

Ingredients

1/2 cup coconut milk
1/2 cup almond milk
1/4 cup pumpkin puree
1 Tbs maple syrup
1 tsp vanilla extract
1/2 tsp pumpkin pie spice
1/4 cup chia seeds

Layer With
Dairy-free yogurt (I recommend Kite Hill brand)

Instructions

1. In a blender, add all ingredients except chia seeds. Blend for a few seconds, until smooth. 
2. Pour the mixture into a medium bowl, then add the chia seeds. Whisk together and allow to sit for 3 minutes. Whisk again, then cover and place in the fridge (at least 3 hours to overnight). 
3. When ready to serve, layer into small glasses or bowls with the pumpkin pie chia pudding, yogurt and granola.
