Pumpkin Pie Protein Smoothie

This Pumpkin Pie Protein Smoothie is a filling and flavorful breakfast, packed with protein and healthy fats, and low in sugar thanks to the secret ingredient, cauliflower! 
Topped with pumpkin spice grain-free granola for a little crunch. 

Can someone please give Southern California the hint that it's fall? While I love to cozy up with a Pumpkin Spice Latte this time of year, the heat has been making it not so fun. This dairy-free pumpkin smoothie recipe is the perfect solution! Cool and creamy, with a hint of sweetness, plenty of pumpkin puree and pumpkin pie spice, and topped with my Pumpkin Spice Grain-Free Granola for a little added crunch.

The secret to making this smoothie so creamy? Cauliflower! If you haven't tried frozen cauliflower in your smoothies yet, you've been missing out! You can't taste it at all, but it adds so much creaminess without the need for banana, making this trick an excellent way to reduce sugar! I did add one date to bring a little bit of sweetness and caramel flavor to this smoothie. 

I've talked on the blog before about just how nutritious pumpkin is, but here are a few more reasons why you should add more pumpkin to your diet:

I love starting my mornings with a nutrient dense healthy breakfast smoothie. They're a great way to get protein, fiber, healthy fats and antioxidants as your first meal of the day!

Let's talk protein powders. I always reach for a plant based option with simple ingredients and as little sugar as possible. My absolute favorite is Perfect Fit Protein by Tone It Up. It tastes amazing, can be used in smoothies and baked goods, and contains no stevia or artificial sweeteners.

Pumpkin Pie Protein Smoothie

Ingredients

3 cauliflower florets (steamed, then frozen)
1/3 cup pumpkin puree
1 Tbs ground flaxseed
1 date, pitted
1 scoop protein powder (Perfect Fit by Tone It Up Nutrition is my favorite)
1/4 tsp pumpkin pie spice
1 1/2 cups unsweetened almond milk (try homemade for the best quality)

Top with:

Instructions

1. Combine all the ingredients in a blender and blend until smooth. 
2. Top with granola and enjoy!
