Pumpkin Spice Grain-Free Granola

This recipe is a perfect combination of all your favorite fall spices along with maple syrup, coconut oil, almonds, pecans and pumpkin seeds. 

It may not feel like fall with it being 100 degrees in California right now, but I'm still obsessing over all things fall! Like this Pumpkin Spice Grain-Free Granola!

Store bought granola is full of sugars and typically contains grains. This grain-free granola recipe is loaded with healthy fats, omega 3s and protein. It's naturally sweetened with maple syrup, coconut oil helps it crisp up and ground flax seed binds it all together. This recipe will make your home smell amazing and is perfect for fall!

You can serve this granola up any way you like! Add to yogurt, smoothies or parfaits. Pour in a bowl with your favorite dairy-free milk over top. Eat some as is for a mid-day snack.

Pumpkin Spice Grain-Free Granola

Ingredients

1 cup raw almonds, chopped
1 cup raw pecans, chopped
1 cup pumpkin seeds
1/4 cup ground flax seed
4 Tbs coconut oil, melted
2 Tbs maple syrup
1 tsp vanilla extract
2 tsp pumpkin pie spice

Instructions

1. Preheat oven to 300 degrees. Line a baking sheet with parchment paper.
2. In a large bowl, mix all ingredients. Spread the mixture onto the baking sheet.
3. Roast for 15 minutes, stir and roast for an additional 20 minutes until golden brown.
4. Store in an air tight glass jar in the pantry.
