Sheet Pan Sausage and Fall Veggies

An easy and healthy sheet pan recipe that's perfect for busy weeknights! 
This meal is baked on one pan, is packed with fall flavors and seasonal veggies, and is completely customizable.

Sheet pan dinners are my go-to meal for nights when I don't feel like cooking, am too tired to think, or all of the above! What's not to love about one pan, easy prep and easy clean up?!

You can easily customize this dish with your favorite veggies. I chose a fall themed combo of Brussels sprouts, sweet potatoes and apples. I amplified the fall flavor with lots of dried and fresh seasonal herbs and a hint of cinnamon. 

Not only is this dish a perfect weeknight meal, it's also perfect for meal prep! Prep a pan of this and you've got yourself dinners or lunches to reheat during the week. 

Sheet Pan Sausage and Fall Veggies

Ingredients

1 pound Brussels sprouts, trimmed and halved (quartered if large)
2 sweet potatoes, peeled and diced into 1/2 inch cubes
2 crisp baking apples, diced into 1/4 inch chunks (I used Granny Smith)
1/2 red onion, diced into chunks
1 package smoked chicken apple sausages, sliced into thick slices
4 Tbs avocado or olive oil
1 tsp dried thyme
1/2 tsp dried sage
1/2 tsp cinnamon
1/2 tsp smoked paprika
1/2 tsp garlic powder
2-3 sprigs fresh rosemary
Salt and pepper, to season

Instructions

1. Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper and set aside.
2. Prep the veggies (see ingredients above) - It's important to follow the prep instructions so that everything cooks at the same time!
3. Add veggies and sausage to sheet pan.
4. In a small bowl, combine the oil and seasonings.
5. Pour oil and seasoning mixture over sausage and veggies and toss to coat.
6. Bake for 15 minutes. Remove from the oven, toss and bake an additional 10-20 minutes, until browned and all veggies are cooked through.
