One-Bowl Paleo Cranberry Orange Muffins

These One-Bowl Paleo Cranberry Orange Muffins are the perfect breakfast or afternoon treat for the holiday season. These muffins are grain-free, dairy-free and naturally sweetened.

Can you believe it's already time to start thinking about the holidays?! This time of year always has me thinking about family and traditions. Growing up, it was a Christmas tradition for my Mom to make Cranberry Orange Muffins. The sweet, fluffy muffins, flavored with orange and fresh cranberries were always on our holiday breakfast table. I decided to recreate this family favorite into a grain-free, dairy-free and naturally sweetened version that I could enjoy!

There's something about fresh cranberries that just screams holiday season! They're so pretty and festive! These One-Bowl Paleo Cranberry Orange Muffins are sweet, tender and dotted with fresh tart cranberries with a hint of orange.

One-Bowl Paleo Cranberry Orange Muffins
Makes 10-12 Muffins


3 ripe banannas
3 eggs
1/2 cup almond butter
1/4 cup maple syrup
1 Tbs coconut sugar
1 tsp vanilla extract
1/2 orange, juiced
1 tsp orange zest
1/4 cup coconut flour
1/4 tsp ground nutmeg
1/2 tsp ground cinnamon
Pinch salt
1/2 tsp baking soda
1 tsp cream of tartar
1/2 cup fresh cranberries

*I like to add Vital Proteins Collagen Peptides for a gut-healing boost. Feel free to leave this out if you don't have it on hand. 


1. Preheat oven to 350 degrees. Line muffin tins with paper or silicone liners. *Note: I like to lightly spray silicone liners with coconut oil. This makes the muffins come out perfectly every time!
2. In a large bowl, mash the bananas until soft. Add eggs, almond butter, maple syrup, coconut sugar, vanilla extract, orange juice and zest. Stir to combine.
3. Add the coconut flour, collagen peptides, spices, salt, baking soda and cream of tartar. Stir to combine. 
4. Stir in fresh cranberries. 
5. Fill lined muffin tins 3/4 full with batter.
6. Bake for 25-30 minutes, until a toothpick comes out clean. Allow to cool in the pan, then finishing cooling on a cooling rack.

Do yourself a favor and make these One-Bowl Paleo Cranberry Orange Muffins. They are perfect for Christmas morning or as an afternoon snack. These also freeze well, but you may not have leftovers!!
