Peppermint Mocha Bulletproof Latte Bombs

Simplify your morning bulletproof coffee or tea prep with these gut-healing, metabolism boosting Peppermint Mocha Bulletproof Latte Bombs! 

If you follow the blog, it's no secret that I'm obsessed with bulletproof lattes. Particularly, with my Bulletproof Latte Bomb creations! The original idea came to me one very sleepy morning while prepping my bulletproof latte. I realized that not only was it a hassle to have to pull out and mix in several ingredients, but I also ended up dropping my entire jar of coconut oil all over the floor that morning. I knew I had to find a better way! 

Enter these little beauties! These Bulletproof Latte Bombs provide a gut-healing metabolism boost to start your day, and they're so frothy and creamy!

I've had some fun with creating different flavors. It started with a classic Cinnamon Vanilla. Then Pumpkin Spice. Now that the holiday season is right around the corner, I had to create a Peppermint Mocha variation! 




While the rest of the world lines up for a sugar laden Starbucks Peppermint Mocha (54 whopping grams of sugar!!), I'll be at home sipping on this dairy-free version, made with  peppermint extract, cacao powder and good for you ingredients! 

Peppermint Mocha Bulletproof Latte Bombs
Makes about 8 servings

Ingredients

2 cups almond or coconut milk (try my homemade almond milk)
1/4 cup coconut oil
3 Tbs ghee or grass-fed butter
2 Tbs cacao powder 
2 tsp peppermint extract
1 tsp vanilla extract
Silicone ice cube molds (like these)

Optional
2 Tbsp honey or maple syrup

Instructions

1. Add all ingredients to a saucepan and warm over low heat. Stir to combine.
2. Blend with a stick blender or carefully pour into a blender. Blend for a few seconds, until frothy and combined.
3. Pour into silicon ice cub molds and allow to cool before transferring to the freezer. Freeze overnight until completely frozen and set. Remove from molds and store in a freezer bag in the freezer.

Morning Preparation
1 perfect bulletproof peppermint mocha latte

Ingredients

2 latte bombs (straight from the freezer)
1 scoop collagen peptides (Vital Proteins is my favorite)

Instructions

1. Add latte bombs to hot coffee or tea (so good with Tazo Awake Black Tea)
2. Gently stir while the bombs melt (this should take a few seconds).
3. Add collagen peptides and stir again.
4. Froth with a handheld frother (like this one) or blend in a blender for a few seconds.
