Green Goddess Detox Soup + Homemade Vegetable Broth

This Green Goddess Detox Soup is packed with fresh veggies and good for you ingredients to boost your immunity and get your skin glowing for the new year! 

After all the holiday indulgences my body is craving fresh, clean, simple meals. I whipped together this detox soup on a whim and it turned out fabulous! 

It's filled with tons of beautiful green veggies and herbs and loaded with nutrients and antioxidants to help your body detox. This soup is also a great way to boost immunity and fight off the cold and flu season germs! 

I'm bringing you two recipes in one with this post! If you don't have time to make the homemade vegetable broth in this recipe, feel free to use a good quality store bought version. However, making your own really ups the nutrient factor!! I love to freeze the leftover broth in wide-mouth mason jars or ice cube trays for another use. It's great to have on hand!




Green Goddess Detox Soup

Ingredients

2 Tbs coconut oil
1 onion, diced
4 garlic cloves, diced
1 zucchini, diced
2 heads broccoli, cut into florets
4 cups vegetable broth (*See recipe for homemade below)
Juice of 1 lemon
Large handful fresh parsley
Large handful fresh dill
1/4 cup coconut cream
Salt and pepper to taste

Topping Ideas: Chopped fresh herbs, micro greens, lemon juice, pine nuts, pumpkin seeds.

Instructions

1. In a large pot, heat coconut oil over medium-high heat. Add onions and garlic and cook 3-5 minutes until soft.
2. Add zucchini and broccoli. Cook for 5 minutes. Add vegetable broth. Bring to a boil, then reduce heat, cover and simmer on low for 15-20 minutes, until vegetables are soft.
3. Add lemon juice and fresh herbs. Blend with immersion blender or transfer to regular blender and blend until smooth.
4. Stir in coconut cream. Season with salt and pepper to taste.
5. Top with desired toppings.

Homemade Vegetable Broth

Ingredients

2 onions, diced
3 garlic cloves, diced
4 stalks celery, diced
Large handful kale
2 quarts filtered water

Instructions

1. Add onions, garlic cloves, celery, and kale to a large pot.
2. Cover with water. Bring to a boil, then reduce heat, cover and simmer on low for 3-4 hours.
3. Strain vegetables and discard.
4. Use broth immediately in your favorite recipe or pour into wide mouth glass mason jars. Allow the jars to come to room temperature before storing in the fridge or freezer. To defrost from frozen, remove from freezer and store in fridge overnight, or submerge jar in hot water until defrosted.
