The Best Paleo Banana Bread Muffins (Grain Free, Refined Sugar Free, Protein-Packed)

Easy, one bowl recipe for the best ever Banana Bread Muffins. 
Loaded with chocolate chips and walnuts!

These healthy banana bread muffins are decadent and perfectly moist. Just like your favorite banana bread, but baked into a muffin!

Free of gluten, grains, refined sugar, and dairy. Loaded with good for you ingredients and packed with protein.

So good for you can eat them for breakfast and absolutely feel good about it!




Mix all the ingredients in one bowl, fill into muffin tins, and bake. They're that easy! Perfect for meal prep. 

Feel free to customize the mix ins. I use Enjoy Life dark chocolate chips and walnuts in this recipe. 

Ingredients

2-3 ripe bananas, peeled
3 eggs
1/4 C maple syrup
1 tsp vanilla
1/2 C almond butter
1/4 C coconut flour
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 tsp baking soda
1/2 tsp baking powder
Pinch of salt
1/2 C walnuts, chopped
1/2 C chocolate chips

Instructions

1. Preheat the oven to 350 degrees and line a muffin tin with liners.
2. In a large bowl, add the bananas and mash with a fork.
3. Add eggs, maple syrup, vanilla, and almond butter to the bowl. Mix to combine.
4. Add the coconut flour, cinnamon, nutmeg, baking soda and powder, and salt. Mix to combine. 
5. Fold in the chopped walnuts and chocolate chips.
6. Fill muffin tins with batter. Optional: Top each muffin with a few chopped walnuts and sliced banana. Bake for 30-35 minutes.
