Grilled Greek Chicken Salad

Greek salad loaded with Mediterranean flavors and perfectly grilled chicken. 
Prep the chicken and dressing in advance for easy meals during the week.

This Greek chicken salad is a regular on my meal plan rotation, and for good reason. 

The Mediterranean flavors are so light and fresh. Plus, it's topped with perfectly grilled chicken and a tangy homemade Greek dressing. It's everything a Greek salad should be!

Not only is it delicious, it's also perfect for meal prep. Make a big batch of the grilled chicken and mix up the dressing during the weekend, and you'll be setting yourself up for weekday lunches or light dinners.

Ingredients

Boneless, skinless chicken breasts
1 tablespoon avocado oil
Salt and pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon turmeric
2 teaspoons dried oregano
Mixed greens
Tomato, diced
Cucumber, diced
Kalamata olives
Pepperoncinis, sliced

For the Greek dressing

1/3 cup Extra virgin olive oil
1/4 cup red wine vinegar
Juice of 1/2 a lemon
1 small garlic clove, minced
1 tsp Dijon or spicy brown mustard
1 tsp dried oregano
Salt and pepper to taste

Instructions

Add dressing ingredients to a mason jar and shake well to combine. 

Drizzle the chicken with avocado oil and season with salt and pepper, garlic powder, onion powder, turmeric, and dried oregano.

Preheat grill to medium heat. Add chicken to grill and cook, flipping occasionally, until the chicken is cooked completely through. The internal temperature should reach 165 degrees F.

Assemble the salad by adding remaining ingredients to a salad bowl. Toss with the Greek dressing and top with grilled chicken.
