Instant Pot Healing Chicken Zoodle Soup

A comfort food classic, filled with healing ingredients, 
and made healthier with zucchini noodles!

There's something so comforting about a hot bowl of chicken noodle soup. Whether you're feeling under the weather, are looking to boost your immunity, or just want some comfort food goodness, this easy Instant Pot chicken soup recipe is for you! 

This healing chicken zucchini zoodle soup is easy to make in the Instant Pot, is full of nutrients, and perfect for boosting immunity. Just like your mom’s comfort food classic chicken noodle soup, but made healthier with zucchini noodles.


Whenever I feel the sniffles coming on or need to give my gut some love and extra healing, this soup is on the menu. I've even been known to eat it for breakfast! The benefits of bone broth, protein, and easy to digest veggies are a great way to start the day!

This soup is incredibly easy to make thanks to the Instant Pot and is full of nutrients. The flavors are reminiscent of your mom's classic chicken noodle soup, but lightened up with zucchini noodles. 

Another fun way to change up this soup is to use Palmini noodles instead of zucchini noodles (pictured below). Palmini noodles are a low carb pasta alternative made from hearts of palm, and I love them!

Ingredients

1 tablespoon olive oil or ghee
1 onion, chopped
3 garlic cloves, minced
1 pound chicken breasts
32 oz. chicken bone broth
2 bay leaves
6 sprigs fresh thyme
3 tablespoons parsley, chopped
Optional fresh herbs: 1 tablespoon each of oregano and dill, chopped
3 carrots, chopped
4 stalks celery, chopped
2 zucchini, spiralized
1/2 lemon, juiced
fresh parsley for garnish
salt and pepper to taste

Instructions
  1. Set your Instant Pot to saute mode. Add the olive oil or ghee, onion and garlic. Saute about 3 minutes. 
  2. Add the chicken breasts and broth. Secure the lid, set to manual mode and cook on high pressure for 10 minutes for fresh chicken, or 20 minutes for frozen chicken.
  3. Once the timer goes off, quick release the pressure. 
  4. Remove the chicken, and shred using two forks. 
  5. Return the chicken to the Instant Pot, and add the bay leaves, fresh herbs, carrots, celery, and zucchini noodles. Secure the lid, set to manual mode and cook on high pressure for 2 minutes. 
  6. Once the timer goes off, quick release the pressure. Stir in the lemon and add additional salt and pepper to taste if needed.
  7. Serve with fresh parsley on top.
